Again and Again, We Craft Something Unexpected
At Nitro Ventura, we believe the most memorable drinks are often the ones no one expects. For this collaboration, we wanted to create something deeply rooted in the spirit of Nusantara—something honest, bold, and unfamiliar. The journey was far from simple. We began with banana, hoping to capture a comforting tropical profile, but the result never felt complete. After countless rounds of research and development, we found an unexpected direction: nutmeg.
Imagine a barista in a coffee shop carefully developing a drink inspired by the warm, aromatic character of nutmeg. It was a surprising choice, but that was exactly the point. The result is a beverage that feels both nostalgic and entirely new—an exploration of Indonesian flavors presented in a way that only Nitro Ventura could imagine.
To accompany it, we reintroduced one of our signature creations, originally known as Beach Boys, and renamed it Mbawana for this special omakase experience. This nitro beverage combines pineapple, coconut, and a bright touch of lemon, creating a refreshing counterpart with tropical depth and lively acidity.
At Mare Nostre, these pairings come together as part of an omakase experience designed to reveal layers of flavor, memory, and discovery. Each sip tells the story of persistence, experimentation, and the belief that something truly unexpected can become unforgettable.
